Mushroom & Pea Risotto
Flavour Kit
1 Onion, finely diced
180g peas, defrosted if frozen
300g mushrooms, sliced
140g arborio risotto rice
30g parmesan, shaved
Simple Swaps
Replace the peas with cooked chicken
Add sliced asparagus
Make a pie by cooking diced chicken, the paste and 150ml cream. Add the cooked mushrooms and top with puff pastry
Prep time 5 mins
Cook time 25 mins
1 Heat 2 tbsp oil over a low heat in a lidded non stick pan. Cook the onion for 5 minutes, ensuring it does not go brown.
2 Add the mushrooms and mushroom seasoning and cook for another 2 minutes, stirring occasionally.
3 Meanwhile make the stock by diluting the paste with 470ml boiling water in a jug.
4 Add the rice and the stock to the pan, cover with the lid and cook for 13 minutes until the rice is nearly cooked and most of the stock absorbed. Stir occasionally.
5 Stir through peas and half the parmesan, cook for a further 5 minutes.
Sprinkle the rest of the parmesan on top and serve.Package Type
